After Dorothy, our French Chef, now it's Maddalena, An Italian Chef !

Monique and Maddalena are fascinating people. You could (and I did) talk to them for hours (yes, they indulged me that much). The met (may I tell this?) years ago when Maddalena was writing a graduate thesis on waste. She stayed with Monique and weighed the trash people discarded, making spreadsheets. After running *big* name high end restaurants for years, Maddalena is back at Tesoro Escondido working magic with the local foods. The prices are so low for the quality I was a little embarrassed. 

"Dorothy is an incredibly talented French chef (!) and she spoiled us rotten while we were there. Every meal was amazing. The dining area is at tree-level and we saw sloths napping and eating just 20 feet away. Incredible."

"The French chef, Dorothy took EXCELLENT care of us. She is this sweet little petite French lady who has only been in Bocas for about 4 months. She speaks a little Spanish and a little English, but her animated way of communicating made our conversations that much more interesting. Her food is a fusion of French cuisine with a twist. She incorporates fresh Bocas abundant ingredients to the dishes creating a wonderfully different culinary experience. Try the lasagna made with plantains instead of the lasagna noodles. YUM! She also made us this blended fruit cocktail drink that was really good. You MUST try the chocolate cake made from coco beans straight from Monique's farm. Its a bitter chocolate, which was GREAT for us because we don't really like the sweet milk chocolates. Every meal was like sitting in someone's kitchen."
